Egg White Dijon Vinaigrette

INGREDIENTS

·     2 hard-boiled egg whites, chopped finely

·     1 tablespoon Dijon mustard

·     3 tablespoons Chardonnay vinegar

·     ¼ cup extra-virgin olive oil

·     1 teaspoon honey

·     ½ teaspoon low sodium tamari or soy sauce

·     ½-1 teaspoon grated spring garlic, garlic or shallot

·     1 teaspoon Kosher salt

·     ½ teaspoon fresh cracked black pepper

INSTRUCTIONS

1.   Combine all ingredients in a mason jar. Shake to fully emulsify. Taste for seasoning and add more salt and pepper as needed.
