6 cups fresh cranberries (frozen can be substituted)
1 cup brown sugar
1 cup Acacia Honey
4 cups fresh orange juice
1/4 cup fresh Ginger root (peeled and chopped)
2 star anise
1 cinnamon stick
1/2 cup fresh orange zest (pith removed)
2 teaspoons fine sea salt
1. Combine the sugar, honey and orange juice in a medium-sized heavy sauce pot.
2. Add the ginger root along with the chopped zest, anise and cinnamon stick. Simmer over low heat until reduced.
